I can say a little about Suikoden II's major battles... The main problem with hacking them is that every single one uses a different set of addresses. Some basic data structures seem to be the same, but there's enough changes that I suspect each battle is actually a separate piece of code, rather than just a minigame type thing with different settings for each battle...
