Heh, I've seen some episodes of a few you mentioned there. Specifically Fate/Stay Night, Utawarerumono, and Noien. One of these days I'll grab the rest of the three, I suspect...

If you want to indulge yourself in Enlightenment philosophy (like Existentialism), then watch Neon Genesis Evangelion (I just call it Evangelion, but for the oddest reason, people have no idea what I'm talking about when I say just that)...It has very emotionally detached and stoic characters, but the symbols and philosophy of human kind in there gives you some things to think about, such as natural ambition and instinct of humans, and the things we are now conformed to do, and how those things conflict with our instincts.
But, when I watched Evangelion, I got pretty depressed after doing so. That's why I enjoyed Paranoia Agent and Eureka Seven. Paranoia Agent is a good mystery story that plays with your mind, thinking there's a real solution to the mystery, but it ends up being more messed up then anything your most peculiar dreams have conjured. It's relatively easy to get the symbolic meanings, but the way the story distorts itself as it uncovers more and more actually makes it a really sad story of guilt and consequence.
Eureka Seven, on the other hand, has a very good plot setup and extremely cool events that occur, but what gets me about it is how Renton is incredibly stupid and pointlessly irrational for half of the show (I swear to you, 25 whole episodes...), and some lines are just plain stupid at times. And, sometimes these flaws carry into more important scenes later on and may distort the intended mood, but generally, you will enjoy the dynamic flow of events if you like adventure. There's also a painfully heavy transference of the universal view of love in the story, which does get annoying, but it is very meaningful when the time is right. The ending, at first, doesn't seem satisfying, but if you analyze everything, you'll realize that it was conclusive in giving hope to a hopeless situation. Overall, though, I thought it was worth watching because it was optimistic as well as very forthcoming with its views of war and imperialism.
I'd recommend Paranoia Agent first of all, though. It's very short, and it's in-between the other two.
