There are lots of games which were designed with graphics settings intended to take advantage of future PC hardware improvements. However, Crysis is probably the most well-known example, even though it was released more than 10 years ago (it STILL pushes some of today's top-of-the-line PCs to their limits).

One of the things that will cause PCs to experience a graphical nervous breakdown is high-definition particle physics. Having to emulate and draw millions of tiny, single-pixel dust/sand/dirt particles, and then give them realistic drifting properties, is known to bring even some of the most powerful rigs to their electronic knees.

I turn grass and rain off. And I notice that if I'm hacking a PC game and turn my player's speed up to 255, and then I start running too fast, the game will crash.

Is that on the original Crysis? If so...wow. It's STILL crashing PCs due to graphics overload to this day! That has to be some sort of accomplishment (although a bit dubious).

          No, not Crysis, Oblivion.

I think that's just a general Bethesda thing, though. Not sure if Morrowind had it, but most of their other sandbox, Gamebryo-based games seem to. With Skyrim, it's like crashes are random encounters, and the danger number goes up in proportion to how fast you're going.

Those Elder Scrolls games are fun to hack, Pyriel. And highly addictive, I can play those games for hours.
