    I've played three games which feature AI which rage-quits if it gets too far behind (or even if it is even losing at all).

    1. MVP Baseball--get more than 5 runs ahead of the AI, and the AI will simply rage-quit, locking the game up with a pinch-hitter notice on-screen.

    2. Nicktoons MLB for DS--get more than 5 runs ahead of the All-Star difficulty AI, and the game will rage-quit, after you score the run which makes you 5 runs ahead. Basically, the AI just gives up, and won't let you finish the game, thus not allowing you to score the win (or even back out of the game--you need to reset the DS).

    3. Smackdown vs. RAW 2011--on certain slider settings, the AI will "rage freeze" if you manage to shift the momentum back in your favor following a swerve by the AI (they perform a sneak-attack before the match). The rage freeze usually occurs at one of two points: either after earning your finisher or successfully performing it. I've also seen 3-count rage freezes (the game freezes right as you score the 3-count pinfall) and even a rage freeze AFTER the "Rematch/Exit" option appeared on-screen!

    In the last two cases, the rage-freeze effect can be avoided. For Nicktoons MLB, just play on either Rookie or Pro difficulty (NOT All-Star). For Smackdown vs. RAW 2011, either avoid playing on Legend difficulty, or avoid putting the AI-reversal sliders higher than their default settings. This seems to keep the game from freezing due to AI rage quits.

    I've been getting really good matches on Hard difficulty with default AI-reversal sliders, and the game-balance and damage-balance sliders all zeroed out. Here's the trick to "stronger" AI opponents (as in, they can take more damage, and kick out of pins more): turn your HUD off. The HUD seems to weaken the AI considerably, for some odd reason. It is also highly advised to turn the kickout style to original, as the tap/hold meter will NOT appear, so you will not know when to release the held button(s). This would give the AI a distinctly unfair advantage when pinning you.
